Baked Eggs Balado

    Spicy tomato kaffir lime sauce, balado tomato relish, mixed krupuk

    Inspiration: In creating our new breakfast menu in diMare, I wanted to adapt one of my favourite breakfast dishes: eggs shakshuka to fit within our concept of local driven ingredients. I took the classic Sulawesi Sambal Balado ingredients and adapted it to a baked eggs preparation.

    The result is a palate teasing, invigorating way to start your day while overlooking the Indian ocean.

    Featured: The new diMare breakfast ala carte/ non-inclusive menu. Offered daily from 7 am – 11 am.

    Balado Tomato Relish

    Recipe: Sambal Balado

    Yields: 4 portions

    • 120 grams
    • 55 grams
    • 160 grams
    • 4 grams
    • 1075 grams

    • 60 grams
    • 20 ml
    • Technique:
    • In a food processor add the shallots, garlic and chilies. Process to course grind.
    • Warm the vegetable oil in a heavy bottom pot over medium heat.
    • Add the processed chili garlic mixture and cook until soft.
    • Add the kaffir lime leaves and palm sugar, continue to cook until almost caramelised.
    • Add the tomatoes and turn heat to low. Cook tomatoes slowly until excess liquid evaporates.
    • Remove from heat and set aside until ready to use.

    Recipe: Balado Tomato Relish

    Yields: 4 portions

    • 50 grams
    • 16 grams
    • 10 grams
    • 20 grams
    • 2 gram
    • 10 grams
    • 10 ml
    • 6 ea.
    • To Taste
    • Technique:
    • Combine all of the ingredients in a bowl and season to taste with salt and white pepper.
    • Set aside and chill until ready to use.

    To prepare the dish:

    • 10 ml

    • 1 portion
    • Preheat your oven to 200 degrees Celsius.
    • In a sauté pan over medium heat add vegetable oil with the cherry tomatoes. Saute until just tender.
    • Add The Sambal Balado and bring up to a simmer.
    • Transfer the hot tomato sauce to the casserole dish.
    • Gently crack two eggs on top of the hot sauce, being careful not to break the yolks.
    • Place the casserole in the oven on a rack. Bake until desired doneness.
    • Remove from the oven, serve with mixed krupuk and tomato balado relish.
    • Garnish with limo
